Protein and Fiber- Roasted Broccoli and Chickpea Recipe

This is adapted from several recipes and my daughter!
Heat oven to 425 degree F
1 lb broccoli torn florets
½ medium to large purple onion diced
1 can chickpeas drained and rinsed, pat dry
Mix in large bowl:
3 tablespoons of olive oil
1 1/2 teaspoon pink Himalayan salt
¾ teaspoon garlic powder
(¾ teaspoon onion powder if not using fresh onion)
Black Pepper to taste or Cayenne pepper
Toss fresh broccoli and chickpea mixture to coat well with mixture above.
Bake on cookie sheet covered in foil at 425 degrees F for 20-25 minutes.
Dressing optional:
3 Tablespoons olive oil or tahini
2 Tablespoons lemon juice, fresh is always best
2 cloves minced garlic or ½ teaspoon garlic powder
Pink Himalayan salt and Black pepper to taste
Drizzle over freshly roasted broccoli and chickpeas and enjoy!!
